It was the kick I needed - So, I’m opening up Gutsy Cooks again.  If you been here before you know how that works and if you participated before, you are welcome to come back.

If you cannot wait until I post the menu line up for the month - guess what? Start with menus 72-75 from last year, which is sort of ironic, since they were the April menus.  

Can you believe it was not even planned? But, apparently the universe knew when to push.  I writing down the grocery list already for the Chicken Cordon Blue option.

Chica Brunch - Brown Sugar and Vanilla Lip Polish

Wedding planning is OVER.  And I hate to say it, but I’m glad.  Except that now I seem to be a bit lost and cannot find my mojo back to do things that are NOT wedding planning related.

I need to jump back on the bandwagon and the best avenue to do it is getting back to planning my monthly Chica Brunch.  If you are new to Sweetbites - a little recap.  Every month, I invite a group of girlfriends to my house and host a Sunday Brunch which I have named CHICA Brunch (chica is Spanish for girl, and I call all my girlfriends that – so I figure it would be fitting and it stuck).  The way it works? I ask each of the girls to bring a brunch dish to share and I contribute with the booze – mainly mimosas and making sure my house is sparkly clean.

Chocolate Chip and Coconut Rum Cookies

Tom and I are still recuperating from our wedding.  I don’t know how couples have the energy to go on a full pack honeymoon after the wedding.  The first 2 days all we did was sleep – we had no energy to do anything else, except sleep and just huddle together in our house and not make any decisions.

We were totally exhausted.  Our brainpower is still in total shut down and slowly rebooting itself.

For the past week we have eaten sandwiches, salads, cereal and nothing else, we figure those were the easiest things to do under our clouded mind.
